Empire Strikes Back - Lando leads them into the conference room, and as soon as Han sees Vader, he draws and fires, without hesitation. Truly, Han shot first!

this question is tough, because there is the scene in attack of the clones when padame' and anakin profess their love before they supposedly die
the banter between obi wan and anakin chasing the shape shifter in the yellow car
the pod race in episode I
there is the Kick @ss scene of yoda vs count dooku
episode III : obi wan and anakin landing the destroyed ship after saving palpatine, or obi-Wan vs Anakin at the end of the movie.
episode IV : when han walks over jabbas tail
episode V : when leia tells off han after he saved luke "I'd rather kiss a wookie!" "I can arrange that"
episode V : when yoda explains the force to luke before he lifts lukes x wing out of the swamp
episode V : when Lando greets leia for the first time "helllllooo, gorgeous! ( you almost expect him to say next: how would you like a COLT 45 )
episode VI : final fight between Luke and Darth vader

I also like the scene where the two Skywalkers, father and son, duel it out and the father's love of his son empowered him to save the son.

I would have to say that ESB is my favorite movie, but my favorite scenes were in Revenge of the Sith. I think because of the heavy emotions when Obi-wan is fighting Anakin. The things they say to each other kind of break my heart:
Anakin: You turned her against me!
Obi-wan: You have done that yourself!
Anakin: From my point of view the Jedi are evil!
Obi-wan: Well then you are lost!
Obi-wan: I have failed you, Anakin. I have failed you.
Obi-wan: You were the chosen one! It was said you would destroy the Sith, not join them!
Anakin: I hate you!
Obi-wan: You were my brother Anakin! I loved you!
Anakin: You turned her against me!
Obi-wan: You have done that yourself!
Anakin: From my point of view the Jedi are evil!
Obi-wan: Well then you are lost!

Oh man, I'm sorry to do this after saying you were getting old the other day but... for me this is one of the worst lines in the whole saga. It's a perfect example of bad writing... it embodies the opposite of the classic advice "show, don't tell". It's Ep III's equivalent of the toe-curlingly awful "No, it's because I'm so in love with you!"
The other ones you mentioned are all pretty great. Ep III is seriously underrated.
