there at least 7 basic forms in lightsaber combat starting with:
form 1: shii-cho
form 2: makashi
form 3: soresu
form 4: ataru
form 5: shien/djem so
form 6: niman
form 7: juyo/vaapad.
but there is other types of forms made by other jedi and sith through time as past.

I would think most of these techniques are taken from Iaido, Kendo and Ken Jitsu as the light saber bears many similarities to the Katana .

Here is a link to a good article on the fictitious forms, and yes many come from real work techniques, some are just crazy for show items as well such as the "telekenetic lightsaber combat" form :-)

Personally, I prefer the book of the five rings and its teaching for practical use, but some of the info is pretty interesting nonetheless
