Chili stretches far. My family also has a dizzying array of casserole recipes from which to choose. We usually wind up bringing one of those along with chili.

I like doing baked salmon with lemon and dill. It's easy and quick to make. it can be kind of expensive but it is worth it. I'm from the pacific northwest (Washington State) and naturally love salmon. I use
This recipe
at home all the time.
Ingredients (Makes 4 servings)
2 tablespoons oil
1 lemon, juice and zest
2 tablespoons dill, coarsely chopped
2 clove garlic, coarsely chopped
pinch of salt and pepper
2 pound salmon filet
Directions
Puree the oil, lemon juice and zest, dill and garlic in a food processor until smooth.
Place the salmon on foil on a baking sheet, pat dry, season with salt and pepper, spread on the dill and lemon mixture and bake in a preheated 400F (or 204C) oven until just cooked, about 10-15 minutes.
Garnish with sliced lemon and fresh dill.

I literally just made this up on the spot*.
1 lb ground beef
1 onion, diced
1/2 lb pasta (spaghetti is a good choice)
1/2 lb kidney beans
1/2 lb tomatoes, diced
1 bell pepper, diced
hot peppers, to taste
chili seasoning, to taste
Water
Brown meat and drain. Throw all the ingredients into a large pot or slow cooker. Add water to cover ingredients (in pot) or to the safe maximum (in a slow cooker). Simmer for 4-8 hours
*because I don't usually follow recipes. I tend to just throw stuff together until it "looks right."

Depends really on who the people are that I am serving. But I do have a couple favorites.
Enchilada Pie
Coat pie dish with enchalada sauce
Layer Corn Shells
Refried Beans or Chili
Cheese
Meat &.....whatever else you like on tacos....onions, olives, tomatoes, mexican rice....
Layer Corn Shells on top
Salsa
Cheese
Its easy and very yummy as either a meal or dip or both
Alfrado Lasagna
I actually made this and other types at the 2014 gathering as our first opening dinner meal......none of it made it through the night lol
Same way you make any lasagna....just instead of a red sauce I used Alfrado Sauce and Chicken instead of hamburger with bacon sprinkled on top
