I am wondering if you know of any Jedi that did not fall to or "dabble" with the darkside?

I can only think of Obi-wan and Yoga.

What other Jedi remained light there entire career?

tzb - Stop getting me in trouble at work for spraying my computer with coffee.

On a serious note - Watch Clone Wars and you'll see quite a few Jedi who according to cannon haven't fallen or "dabbled", like Luminara, or Ki- Adi- Mundi.

What about Runriser - did she ever fall?

what does it seem like almost all "famous" jedi have fall to the darkside at least once in their career?

A lack of imagination on the part of the writers, I suspect. All of the themes of the films have been born out countless times in the EU - giant space stations, rougish space cowboys, enigmatic bounty hunters, mistaken/hidden identities... the list goes on. The films made it clear that the dark side was insidious and persuasive, so it would be strange if we didn't see light-side Force users fall fairly often.

To put it another way, "we all have bad days" ;)

I can go with that. I suspect theme appropriate story elements aside were we to look at it as an analogy for life, we all deal with some pretty dark demons or choose to do some pretty mean things, even when we don't realize that is what we're doing. The redemption theme can be a very uplifting ideal for ourselves. Perhaps the appeal is that we seek to overcome the undesirable parts of ourselves, or atleast master them and turn them into a "Force" for good.

Plo Koon. Though, to be fair, he did invent the light-side equivalent of Force Lightning...

Kit Fisto, Mace, that one old guy...the list goes on. Although I see your confusion, there is quite a few who didn't fall.
